The Paez (also called Nasa) is the largest indigenous group in Colombia.  They’re committed to self sufficiency and have a holistic approach to living and farming.  High elevation, coffee pulp fertilizer, and consistent farm management bring out the best in these beans.  We have been partnered with Fondo Paez since their first direct trade export to us in 2004 and each year the coffee quality is exceptional.  The cup is sweet up front with mild, round acidity and rich throughout with a lovely hint of maple syrup.  The finish is clean and chocolatey.  We've taken to roasting this one with a solid medium roast profile which mellows the acidity, maintains the stone-fruit nuances, and increases the body and finish.  This is one of our most popular selections for the home auto-drip brewer as well as French Press (which is our preference because it allows the subtle acidity to come out front).
