Although the Malay Archipelago island of East Timor is neighbor to Sumatra, the coffee is quite different. This is a fully washed coffee (compared to Sumatra which is semi or un-washed) and tends to exhibit brighter acidity initially, and an overall cleaner cup profile.  We roast it deep and long to bring out the roasted filbert aroma, earthy sweetness, and body. This medium+ roast profile produces a coffee perfect for single origin espresso brewing or paper filter preparations where a touch of milk is common.
