Grown on lush volcanic hillsides and nurtured by old-world farmers, these plump shrubs produce some of Central America’s loveliest fruits.  Beautiful bright acidity with fresh, lemony olive oil nuance is followed by mild cinnamon and roasted almond flavors.  Delicate sweetness with just a hint of earthiness fills the mid palette and preps the smooth, chocolate finale.  We roast this one to a medium profile which brings out the sweet body and rounds the acidity, making it a perfect coffee for auto-drip brewing.  Due to the high elevation it grows at, the acidity is preserved in the cup even at a deeper roast profile.
