This very special small coop is comprised of families from highland communities in the municipalities of Chenalhó, Pantelhó, and Chalchihuitan. They have been producing coffee since the early 1900’s when they were “recruited” as plantation workers. Almost a century later they’ve organized their Cooperative with the goal of becoming part of a more equitable market. The producers are all members of autonomous communities which hold the values of the Zapatistas; land and liberty, human rights and justice. We have been partnered with Maya Vinic for many years and work directly with them to improve their cup quality and premiums. 2007, 2008, and 2009 have seen incredibly consistent improvements in the preparation and flavor of the coffee. It has become one of our best selling bulk coffees in the bulk sections of the fine grocers who carry it. The cup is simply scrumptious with classic hints of chocolate throughout. The acidity is low, soft, and sweet and the balance is perfect. All forms of brewing, sans espresso, are ideal.
