Michiza abbreviates the five ethnic groups gathered into this cooperative: Mixtecos, Chinantecos, Chantinos, Cuicatecos, and Zapotecos.  Their community structure emphasizes old world organic farming techniques, women participation, and collective sustenance production including oranges, corn, beans, and sugar cane.  We have been partnered with Michiza since 2008 and have doubled our commitments since then.  The cup has a very sweet aroma, light to medium yet soft lime-like acidity, cocoa flavors, and good depth.  Compared to our Chiapas selections, this cup profile is a bit brighter with more citrus notes up front.  We roast this one just a hair lighter than the Chiapas to accentuate these fruit tones.  The Chemex brewer as well as French press allow these qualities to shine best.
