Our humble beginnings
Conscious Coffees began with co-creators Mel and Mark in the early 1990s, who first got their start as baristas in Colorado's Rocky Mountains. By 1996, they had a roasting machine of their own, a handful of wholesale accounts, and some new ideas on craft roasting. Since those early days of trial and error techniques, they refined the roasting process that is now equal parts art and science.
Meet The Team
Craig Lamberty - Owner
Craig and his wife, Laura, have owned Conscious since 2017. You will find him cupping coffees with the QC team or potential customers, helping our online and wholesale customers with coffee questions, and packing 90% of all our shipping orders.
Craig likes our Natural Ethiopia brewed as a pour over.
Blake Landin - Operations Manager
Blake has worked at Conscious since 2018. He started in the coffee world in 2013 and has learned to wear many hats along the way. He has a hand in ensuring all parts of the roastery run smoothly, maintains customer relationships through QC, equipment PM/repairs, and consulting.
He drinks espresso based drinks.
Zoe Zibolsky - Head Roaster
Zoe got her start in coffee in Tucson, AZ and moved to CO to become the head roaster at Conscious in 2024. You will find her sample roasting, production roasting, leading QC cuppings, and all kinds of odd jobs that keep this roasting operation in line.
Zoe will be sipping on cold brew year-round.
Josie Rivero - Production Assistant
Josie got her start at Conscious after moving from Miami, Fl to attend grad school at CU in 2025. Her major is Urban Resilience and Sustainability. You will find her keeping our production line in order and delivering orders to our local Boulder customers.
Josie enjoys Peruvian, black filtered coffee.
